Omelets vs. Frittatas
The most important difference between omelets and frittatas is that omelets are fried on only one side whereas frittatas can be fried on two sides. As a fan of the Maillard process, I think the more surfaces fried the better.

You're thinking small. The egg should be extruded through a thin orifice under high pressure to generate a ultra long, ultra thin jet of egg, which could then shoot THROUGH a shower of hot fat, generating insane amounts of surface area.
