Why is blueberry juice red?
posted by Joseph at 11:53 PM
The skin is blue. The juice is red.Not surprising.Apple juice is yellow.
The pigment is anthocyanin, which is blue in an alkaline environment and red in an acid environment. Or maybe it's the other way around. Whatever.
If a leftist environmentalist is a watermelon (green on the outside and red on the inside), would a leftist policeman be a blueberry?
No, he'd be chief of the LAPD.
